Have you been binge watching Korean Dramas and suddenly find yourself craving for Korean fried chicken? Well I got you covered with this simple Korean fried chicken recipe.
For this recipe, we will be cooking the chicken first then cover it with our delicious glaze/sauces. I have included recipes for honey-butter, soy garlic and Korean spicy flavors for you to try.
Fried Chicken Ingredients:
2 pounds of chicken wings (or 4 boneless chicken breasts
sliced to chunks)
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
¼ cup potato/corn starch (you can just substitute this with
flour)
¼ cup all purpose flour
½ teaspoon baking powder (very important for crisp)
For frying:
4 cups cooking oil (corn or vegetable oil)
Directions:
Step 1: Put chicken in a bowl and season with salt and
pepper
Step 2: Mix all the remaining batter ingredients on a separate bowl, add the chicken, mix it well by hand.
Frying:
Step 1: Heat up the cooking oil in a skillet or casserole
(whichever is available) on over high setting for 5-7 minutes. To test: dip the
tip of the chicken on oil, if bubbles come up it’s ready for frying.
Step 2: Put the chicken pieces one by one in the pan. Fry each side
for 5 minutes.
Step 3: Continue frying for about 7-10 minutes while occasionally
turning the chicken over util all sides are cooked and crunchy.
Step 4: Transfer to a strainer or towel lined plate to absorb
excess oil. Rest chicken for about 1-2 minutes
Next and the most important part is to DOUBLE FRY. Double frying makes your fried chicken extra crunchy and yummy!
Step 5: Heat up the oil for about 1 minute and put all the chicken
back.
Step 6: Cook for another 5-7 minutes or until all sides are looking
golden brown.
Step 7: Strain the chicken and turn off heat.
NOW FOR THE BEST PART, here are the glaze/sauces to
re-create your own “Bonchon” or Korean Fried Chicken at home.
NOTE: You can cut
or reduce the ingredients for the sauces if you are planning to make two or all
the flavors.
Optional: you can add sliced nuts (peanuts, cashew or
almonds) or toasted sesame seeds for additional crunch and aesthetics hahaha
Honey Butter:
Ingredients:
4 tablespoons unsalted butter
3 garlic cloves, minced
¼ cup white or brown sugar
2 teaspoons soy sauce
2 teaspoons honey
Directions:
Step 1: Heat up a large pan then add butter and garlic. Cook garlic
until fragrant and crispy.
Step 2: Add soy sauce and sugar. Stir well until the sugar has melted.
Step 3: Add honey and stir. (Note: honey is used as a flavoring,
that is why we are adding it last)
Step 4: Continue stirring until the mixture bubbles up.
Step 5: Add the chicken and nuts of choice/sesame seeds. Mix and stir well to coat evenly.
Soy-garlic:
Ingredients:
1 tbsp oil (just to cook the garlic)
3 garlic cloves, minced
1 slice of ginger (for flavor)
1 ½ tbsp soy sauce
1 tbsp white or brown sugar
1 tbsp water
1 tbsp cornstarch (dissolved in 1tbsp cold water)
Directions:
Step 1: Heat up a large pan add the oil. Then add ginger and garlic.
Cook until fragrant and crispy.
Step 2: Add soy sauce, water and sugar. Stir well until the sugar
has melted.
Step 3: Add cornstarch and stir until the mixture thickens.
Step 4: Add the chicken (and nuts of choice), mix
and stir well to coat evenly or do it one by one.
Korean spicy:
Ingredients:
4 tablespoons unsalted butter
3 garlic cloves, minced
¼ cup white or brown sugar
2 teaspoons soy sauce
1 teaspoon gojuchang (red chili paste)
Directions:
Step 1: Heat up a large pan then add butter and garlic. Cook garlic
until fragrant and crispy.
Step 2: Add soy sauce, gojuchang and sugar. Stir well until the
sugar has melted.
Step 3: Continue stirring until it bubbles up.
Step 4: Add the chicken (and nuts of choice). Mix and stir well to coat evenly.
